Series No. 5: Pickled Mizu

Spring has come, but it seems like it will be a bit longer until it’s warm enough to ride a bicycle again. For now, let us introduce “Pickled Mizu”! “Mizu” is a well known vegetable in Akita. For this treat, the mizu (grown in Daisen) is pickled together with kombu and finished with a rich flavor by adding locally produced ginger and soy sauce from a local miso and soy sauce factory. This goes great with rice and tea.
